Cédric Callenaere, Chef of Aux Armes de Bruxelles
Cédric Callenaere is the Head Chef at Aux Armes de Bruxelles. He says the job is a dream come true. For him, joining Aux Armes de Bruxelles meant becoming part of a restaurant he often went to with his parents as a child.
This is where his dream of becoming a chef was born. Educated at the Ecole Hôtelière de Namur, Cédric Callenaere was named Head Chef of the restaurant La Roue d’Or on Brussels’ Grand Place when he was barely 25. He worked there for 13 years before becoming Head Chef of the Brasserie de Bruxelles, an establishment founded by Laurent Veulemans. During his six years there, he specialized in cuisine inspired by the classic dishes of Belgium and Brussels. Cedric transformed the Brasserie by incorporating advice from Jacques Veulemans, who visited his son’s restaurant regularly. His dream come true has also been a challenge for the chef. He wants this landmark of Brussels’ gastronomic scene to regain the reputation that it never should have lost. All the classic dishes of Belgian and Brussels cuisine can be found on his menu.
